We have all made great strides to eat healthier. We are eating less sugar and focusining on being healthy. But sometimes, you desire something a little sweet. We want a little break and enjoy a little sweetness.
This quick, easy recipe will give you a fresh break without breaking the caloric bank. Enjoy and let me know what you think.
Apple Filling:
- 1/2 lemon, juiced
- 1 tsp water
- 1/2 tsp cinnamon
- 1 apple peeled, cored and sliced
Crumb Topping:
- 1/2 cup almond meal
- 1 tsp raw honey
- 1 tsp coconut oil
- Dash Himalayan sea salt
- 1/4 tsp cinnamon
Instructions:
- Preheat oven to 350
- Place chopped apples in a microwave safe bowl and add cinnamon, lemon, and water
- Microwave for 1 minute, then mix and microwave for another 1 min
- Mix and microwave for a remaining 30 seconds or until soft- set aside
- In a bowl combine topping ingredients until crumbly
- Place on baking tray and bake for 5 minutes
- Place apple filling in shot glasses and layer with crumb topping
