I consider myself very lucky around this time of year. First, I always get to have Thanksgiving early because I always head to Mexico the week of Thanksgiving. Today we had our incredible turkey day. Everything tasted incredible and it was great to see family.
This year we opened our home to 2 young women from India. For one, it was her first Thanksgiving. We all had a great time and enjoyed laughing and sharing stories. Every year families share this time together and build stronger bonds, build new stories and share new recipes.
When I was young, my mother would always put the bones into a pressure cooker and get all the juices to make the best soup. That’s what I love to do with lefetover turkey. So before you get that turkey made, let’s talk soup!
Leftover turkey and bouillon from carcass,
Better than bouillon for extra flavor
Carrots, celery
Choose: Barley, leftover noodles, quinoa, rice, lentils, chickpea pasta
Place all in your cooker of choice, set the timer and let the magic happen. Enjoy
