I don’t know about you, but I love soup when the temps drop. But all the commercial ones are so full of sodium, I can’t stand the taste. When I get home after being out all day, the last thing I want to do is take hours to make soup. I want something warm and fast!
Up comes quick noodle soup. In less than 20 minutes, you can be eating a warm bowl of delicious soup.
Better than Bouillon base (chicken or beef)
2 squares of rice noodles (I like the ones from Costco)
Optional: diced chicken, tofu, or other protein of choice
Bring water and bouillon to a boil and add noodles. When noodles are almost soft, add frozen vegetables to cook to desired doneness.
Nothing better than oodles of noodles and great veggies. Sit back and relax and warm up with your wonderful soup.
