Celebrating doesn’t mean you have to give up all your hard work towards your health goals. Just making a few changes to your menu can mean enormous gains (or losses) for you.
Start with the main course and make it lighter without sacrificing taste. Quality of food makes all the difference. When you taste quality food, it’s much easier to eat less because of the quality of the taste. When choosing your ingredients, choose the best quality you can. You will be rewarded with an explosion of taste.
Ingredients:
1 package wonton wrappers
1/2 lb you choice of protein: ground turkey/meat/chicken, pea protein, TVP, etc.
1 tomato chopped
Bunch green onion chopped
Cilantro chopped
1 Avocado chopped
1 onion chopped
1/2 c. grated cheese
Taco seasoning, salt and pepper
Nonfat plain Greek yogurt
Salsa
Brown meat or protein substitute, with onions and season with salt and pepper and taco seasoning. Work quickly with wonton wraps as they dry out quickly. Keep a wet paper towel over the wraps as you work. Place wontons in muffin tins, fill with browned seasoned mix and place in oven preheated to 350 degrees for 12-14 minutes.
Remove from oven and sprinkle cheese on top while they are hot. Top with chopped tomatoes, cilantro, small dollop yogurt and salsa.
